I’m not sure I understand what you mean. Are you saying when you double-tap with two fingers to go to 100%, then again to go back to “zoom to fit”, that sometimes it hangs?
If so, then try just using the z key to zoom in and out. I actually never realized you could two-finger double-tap to zoom in Aperture (just like you can in Safari), but I tried it and it works fine for me.
