I looked all over and could only find that iPhoto was, at one time, probably written in Objective C using Coca, but I can't verify that. I am referring to the actual Aperture application itself. Also, What is used to write the plug-ins?

I would imagine that all of Apple’s native apps are written in Obj-C. Plugins can be written in many languages, as long as you can bind and link with their Aperture SDK. I just guessing, but I would imagine Obj-C would be the easiest in terms of compatibility.
